Lentil Salad

Ingredients

I cup green lentils
1 cucumber, seeded and small dice
1 bell pepper, orange or yellow- small dice
1/2 cup toasted pecans, rough chop
1 small red onion, small dice
1/2 cup jarred sun dried tomatoes, drained and rough chopped 1/2 cup parsley, rough chopped
1/4 cup mint, rough chopped
3 Tablespoons olive oil
1 Tablespoon lemon juice
1 Tablespoon champagne vinegar

1/2 teaspoon dijon mustard
1 garlic clove, pressed
1/2 teaspoon salt
1/4 teaspoon fresh cracked pepper
1/2 teaspoon Aleppo pepper

Directions

- Cook lentils ; 1 cup lentils in 2 cups in salted water. Simmer for ~40 minutes or until done and tender. Strain and let cool.

- Make dressing with the last 7 ingredients - Mix all ingredients together
- Enjoy!
